15-minute Tofu Curry

Hey awesome animal allies! I’m super excited to share today’s tofu curry recipe with you – it’s a family favorite! I love this recipe because it takes 15 minutes (I kid you not…you could even squeeze it into 10) and only 5 ingredients to prepare and is addictingly delicious! My whole family requests this recipe constantly – we even have it on our birthdays, haha.

Our favorite version of this recipe is with tofu, peas, and spinach, but feel free to customize it however you’d like! That’s the beauty of curry! It’s my favorite throw-together meal. Let’s jump right in!

  • – 1 can coconut milk
  • – 1 cup frozen peas
  • – 1 pack baked tofu (I like Trader Joes’ baked tofu, but you can also use any extra firm tofu and bake it yourself or not if you like the texture a little soft!)
  • – 1 cup fresh spinach
  • – 1 tablespoon curry powder (add more if you prefer more spice)

Combine all ingredients except for spinach in a medium pan. Simmer on medium heat for 5-10 minutes, and then add the spinach in. Continue to cook until spinach is wilted. That’s it!!
